SIPOC is one of my favourite tools. Very nearly every DMAIC (six sigma process improvement) project I have coached has benefitted from doing a SIPOC.
SIPOC represents on one page the key parts to the process operation. Traditional coaching says start with the C and work right to left. I happen to start with the P, then O, then C... then I and finally S. (Whatever works for you.) So this gives you a clear, high level view of all the elements involved in doing that process from start to finish.
Now where it gets interesting is in the relationship between I/P and O. Once you have determined the elements in the SIPOC, ask the customer how they define 'critical to quality' for the O. Then baseline how consistently and well you deliver that level of quality.
The next key step is to understand what variables in I and P drive the quality in O. Focus relentlessly on improving and controlling the I/P variables. The ultimate end-state is that you do not need to measure quality in the O, because you can predict it by the measures of the I/P variables.
