Capacity Model

Hi! I am building capacity models for my business. Does any one have any ideas for me on how to go about building those?

My other question is: What is the standard personal fatigue and delay factor (numerically)? How does one calculate it or collect data for it? Lastly, is there any study/literature available that one can use? Personal fatigue and delay factor is just the percent of time that is not utilized in production because humans do not work like robots - it is the inefficiency of just being human at work.
