process measure is # of items actually produced per hour divided by # that should have been produced per hour to get a percent effectiveness to the standard rate of production.
which should i use? a p-chart of percentages or c-chart of # of items produced per hour or an I-MR chart of # of items produced per hour because the counts are pretty high (a few thousand per hour)

If your counts of items are sufficiently “away” from zero (which it sounds like it) and there is enough variation in the numbers produced each day, then an I-MR chart would work just fine. A c-chart is also an acceptable alternative. A p chart is not applicable in this case.
