    Listen to the voice of the customer – find out their CTQs, e.g range of goods, check out times, out of stock items, cleanliness, staff attitudes, etc.  Then define your first project area. 
    Should be fairly easy to get data – well designed questionnaire etc.

    Well, it seems to me you must have at some point shopped in a grocery store.  And in the event you haven’t, stop by on the busiest day.
    You will find things like…long checkout lines, mispriced food, out-of-stock items, no shopping carts, etc…  Some of these can be fixed without doing much analysis (i.e. send someone outside to get the carts) but you might be able to determine your staffing levels, stocking frequencies are not aligned with your customers’ buying habits.
