    This article gives a good overview of leaning out a Starbucks. I wonder if SigmaBrew came up with these improvements?Cheers, Alastair

    There is another food-service establishment that was apparently designed with Lean concepts in mind, Quiznos Subs. They are a submarine sandwhich chain that’s popular here. The first time I went into a Quiznos happened to be just after I had taken my first Lean class so the things I saw immediatly jumped to my attention. At the point when you place your order, the preparer asks if your order is take-out or dine-in. Your answer determines the shape of the sandwhich rack he chooses (the rack will carry the sandwhich through their toasting oven). The rack shape is a visual queue to the person down the line for how to package your order. Next when you tell what size sandwhich you want, the preparer puts the bread on a cutting board that has precut grooves at the different sandwhich lengths. No measuring, just line up the bread with the right groove and cut. The rest of the line can be broken into smaller or larger tasks in order to scale takt time to demand. People and sandwhiches flow in parallel lines to the cash register where the transaction is completed.
    I know that most of this is just common fast food process, but Quiznos has a feel that it was thoughtfully designed with Lean flow and visual queues. Other places just seem to have happened the way the happened.
