    I’m having trouble with measuring cycle times and takt times for a value stream mapping. There’s a process (Oven Baking) which runs for 8 hrs. It is usually loaded with 4 different products (engines, pumps, cranks and bars) in fixed but different quantities.

    Is Takt time only calculated for process and not product? If yes, how will the denominator (avg daily demand) be for this process of Oven baking?

    Takt time is a calculation not a measurement. Available Operating Time/Customer Demand.
    Some use Net Available Time but that opens the door to have people play with the data.

    Multiple Products you are going to have to figure out demand which defines product mix. That should give some kind of capacity number to be able to process everything.
